SUKHE JAMUN:
INGREDIENTS:
1 cup cottage cheese
1 cup solidified milk ( khoya )
2 tbsp plain flour
2 cups sugar
1 cup water
1 tbsp rose water
Clarified butter, for frying
Sugar crystals ( misri ) a handful
Soda bicarbonate, a pinch
METHOD:
INGREDIENTS:
1 cup cottage cheese
1 cup solidified milk ( khoya )
2 tbsp plain flour
2 cups sugar
1 cup water
1 tbsp rose water
Clarified butter, for frying
Sugar crystals ( misri ) a handful
Soda bicarbonate, a pinch
METHOD:
- To prepare sugar syrup, boil sugar and water for atleast 5 minutes or until you achieve a thread-like consistency.
- Mix solidified milk, cottage cheese, plain flour and soda bicarbonate well to make a smooth, stiff dough.
- Make equal-sized balls of the mixture and stuff one sugar crystal in each ball.
- Deep-fry till golden brown in medium hot clarified butter on low heat to ensure it is cooked inside.
- Drain and let it soak in sugar syrup for 15 minutes. Remove and arrange on a platter and drizzle rose water on top. Serve warm or chilled, as desired.
