GRAPE HALWA

GRAPE  HALWA:

INGREDIENTS:

1  cup  semolina
1  cup  seedless green grapes
1  cup  clarified butter ( ghee )
1  cup  sugar
2  tbsp  cashew nuts, halved
2  tbsp raisins
1/2  tsp cardamom powder
1/4 kesari colour powder, diluted in 1 tsp water

METHOD:

  • Heat 1/4  cup ghee in a wok and fry semolina on low heat till golden brown.
  • When cool, grind to make a smooth powder. Wash and remove the stalk of the grapes. Save a few grapes for garnishing and cook the rest with little water till soft.
  • Stir it well to make a smooth pulp. Strain and keep aside. In 1/4 cup ghee fry cashew nuts on low heat till golden brown.
  • Add raisins and fry till they bulge. Add cardamom powder and remove from heat. Keep aside.
  • In a thick -bottomed pan, cook together grape pulp, semolina and sugar. Keep adding remaining ghee gradually till semolina is cooked and leaves the side of the pan.
  • Add fried cashews, raisins and kesari colour. Transfer to a serving dish, garnish with grapes and serve.
