PUMPKIN PUDDING WITH RAISINS: AMERICA
INGREDIENTS: ( serves 4 )
300 ml milk
200 g stale bread
500 g pumpkin flesh, diced
1 vanilla pod, seeds scraped out
100 g raisins
2 eggs
150 g sugar
Icing sugar, for dusting

METHOD:
- Preheat the oven to 200C.
- heat the milk and soften the bread in it.
- Steam the pumpkin flesh in a colander above the milk.
- Add the pumpkin and vanilla seeds to the milk- bread mixture and puree. Next, add the raisins.
- Beat the eggs and the sugar until frothy and stir into the pumpkin mixture. Bake in a greased ovenproof dish for 30-35 minutes and serve dusted with icing sugar.
