PUMPKIN PUDDING WITH RAISINS

PUMPKIN  PUDDING  WITH  RAISINS:            AMERICA
INGREDIENTS:     ( serves 4 )

300  ml milk
200  g  stale bread
500  g pumpkin flesh, diced
1   vanilla pod, seeds scraped out
100  g raisins
2  eggs
150  g sugar
Icing sugar, for dusting

METHOD:
  • Preheat the oven to 200C.
  • heat the milk and soften the bread in it.
  • Steam the pumpkin flesh in a colander above the milk.
  • Add the pumpkin and vanilla seeds to the milk- bread mixture and puree. Next, add the raisins.
  • Beat the eggs and the sugar until frothy and stir into the pumpkin mixture. Bake in a greased ovenproof dish for 30-35 minutes and serve dusted with icing sugar.
TIPS : Pumpkin is found in numerous side dish recipes, baked goods, desserts, and hearty autumn soups. Carving a pumpkin for Halloween and making pumpkin for a Thanksgiving feast are what many of us consider to be the two most popular uses for it.
