CHILLI CHOCOLATE WITH CREME FRAICHE

CHILLI  CHOCOLATE  WITH  CREME  FRAICHE:              AMERICA
INGREDIENTS:         ( serves 4 )

100  g bittersweet  chocolate
150  ml  milk
1  fresh deseeded chilli
1-2  tsp  brown sugar
A pinch of ground cinnamon
A little creme fraiche
Dried chillies, to garnish

METHOD:
  • Roughly chop the chocolate and put into a pan with the milk.
  • Slit the chilli open and add to the pan with 1-2 tsp brown sugar ( depending on taste ).
  • Heat, stirring until the chocolate has melted.
  • Remove the chilli divide the mixture between four glasses.
  • Stir a pinch of ground cinnamon into a little creme fraiche, add a small spoonful to each glass and serve immediately, garnish with dried chillies if desired.
TIPS : Chilli  peppers are a small, fiery variety of capsicum. There are more than 200 known varieties and they differ greatly in size, colour and level of hotness. Chillies work well in sweet as well as savoury dishes. Here, a little chilli helps to cut through the richness of the chocolate.
