BANANA FRITTERS

BANANA  FRITTERS:                   ASIA
INGREDIENTS:                 ( serves 4-6 )

1  large  egg
1  tbsp  brown sugar
4  tbsp cornflour
2  tbsp  plain flour
1  level tsp baking powder
Pinch of salt
50  ml coconut milk ( unsweetened )
4  firm  banana
Oil, for frying
Honey, to serve

METHOD:
  • Mix the egg and sugar in a bowl. Add the flours, baking powder and salt and mix to a smooth batter with the coconut milk. Leave to stand for 10 minutes.
  • Meanwhile peel the banana and cut each one into 4-5 pieces. Heat the oil in a frying pan, a wok or a deep -fryer. The oil is hot enough when bubbles form on the handle of a wooden spoon held in the oil.
  • Coat the banana pieces in banana batter and fry in the hot oil over a medium heat for 3-4  minutes until golden brown.
  • Drain on a paper towel. Put into bowls, pour a little honey over and serve hot.
TIPS: Banana fritters, or chu i chien in vietnamese, can be found on street corners throughout Saigon. You can dust a combination of powdered sugar and Saigonese cinnamon ( 1/2 cup of powdered sugar for 2 tsp of cinnamon ) over the fried banana.
