CHOCOLATE CAKE WITH CHOCOLATE ICING

CHOCOLATE  CAKE  WITH  CHOCOLATE  ICING:
INGREDIENTS:          ( serves  8-10 )

cake:
150  g chocolate
1/4  cup cocoa powder
1  cup buttermilk
1-3/4  cups  flour
1/2  tsp bakingpowder
1  tsp baking soda
1/2  tsp salt
3/4  cup butter,soft
1-1/4  cups  sugar
2  large eggs
1  tsp vanilla

Icing:
1  cup thick cream
150  g chocolate
50  g  white chocolate

METHOD:
  •  You will need spring form pan that opens on the side, use only the curved bottom. Grease and flour. Keep aside.
  • Heat oven to 180C.
  • In casserole, place the chocolate and cocoa powder. Add buttermilk and heat until the chocolate is melted. Keep it warm.
  • On a piece of paper, sift the flour,baking powder,baking soda and salt. Set aside.
  • In bowl of electric mixer, with the paddle attachment, cream the butter. Gradually add the sugar and continue beating until the mixture is fluffy (this will take 3-5 minutes ).  Add  the eggs, one at a time, mixing well after each addition. Add the vanilla and melted chocolate mixture and beat to combine.
  • Add flour mixture. Beat only until the ingredients are incorporated. Pour into pan.
  • Bake for about 40-50 minutes or untiln a toothpick inserted in the center comes out clean. Remove from oven and place on a wire rack to cool for about 10 minutes. Invert the cake onto the rack.
  • Icing: In saucepan; boil the cream then add the chocolate.Stir until the chocolate  has melted and the mixture is smooth. Remove from heat; pour over cake to cover well. Drizzle white chocolate over cake. Chill to set the icing.
