SAFFRON DOUGHNUTS

SAFFRON  DOUGHNUTS:

INGREDIENTS:        ( serves 8-10 )

4  cups flour
1  tbsp  baking powder
1-1/2  tsp  salt
1/2  tsp  nutmeg, ground
1  large egg yolk
2  large  eggs
1  tsp  saffron, crushed
1  cup  sugar
1  tsp vanilla
1/4  cup  butter, melted
1  cup  milk
For frying: corn oil or shortening
For  dusting:  powdered  sugar

METHOD:
  • You will need saute pan with glass lid.
  • Sift together the flour, baking powder, salt and nutmeg. Keep aside.
  • Beat together the egg yolk, eggs, saffron, sugar and vanilla until mixture is light. Add melted butter, and milk. Beat well.
  • Add the flour mixture and mix well. Transfer the dough to a bowl. Cover and chill the dough for 20-30 minutes to firm up and make handling easier.
  • Roll the dough 3/4 to 1 inch thick and cut into rings using a doughnut cutter.
  • Put oil or shortening in the pan, and heat on medium fire.
  • Fry 3-4  doughnuts at a time for about 2 minutes on each side. Remove with a long- handled slotted spoon or spatula and place on kitchen paper to drain. Continue until all the dough is fried.
  • Dust with powdered sugar and serve warm or cold.
TIPS : Cover the pan with the lid for a few seconds to achieve moist doughnuts.
