CHERRY SQUARES

CHERRY  SQUARES:


INGREDIENTS:       ( serves 4 )

250  g melted butter, slightly cooled
2  extra - large eggs
500  g icing sugar, sifted
250  g desiccated coconut
250  g finely sliced red glaze cherries
1  packet marie biscuits, crushed
1  tsp  vanilla essence

METHOD:
  • Beat butter and eggs together.
  • Mix with remaining ingredients.
  • Press into a greased pan and place in the refrigerator until firm.
  • Cut into small squares.
