DARK CHOCOLATE TART

DARK  CHOCOLATE  TART:

INGREDIENTS:   

400  g dark chocolate, broken into blocks
125  g  unsalted butter
150  g sugar
6  eggs, separated
45  g cake flour

METHOD:

  • Grease a cake pan with butter and place it in the refrigerator while you prepare the tart.
  • Melt chocolate, butter and sugar over a low heat. Stir from time to time. Remove from heat. Beat with a wire beater until slightly cooled.
  • Leave to stand for another 10 minutes. Beat eggs until light and fluffy and add little by little, while beating simultaneously.
  • Add cake flour with a large meat spoon. Beat egg whites until stiff points are formed and fold into the mixture with a large metal spoon. Put mixture in a cold cake pan and place in a cold oven.
  • Heat oven to 160C and bake for 50-60 minutes. The cake will not be fully set in the middle - this is the desired result.
NOTE : Serve cake with ginger yoghurt and fresh gooseberries.
