CHOCOLATE CHEESECAKE

CHOCOLATE  CHEESECAKE:

INGREDIENTS:   ( serves 8 )

For the crust:
1-1/2  cups  cracker crumbs
1/4  cup sugar
6  tbsp   butter room temperature

For the cheesecake  filling
300  g cream cheese
1/2  cup sugar
1/2  vanilla extract
1  tsp  lemon zest
2  eggs
1  cup  sour  cream
1  cup  mini chocolate chips

METHOD:
  • In a large bowl, combine cracker crumbs and sugar. Stir in the butter until fully mixed. Firmly layer crumb - sugar mixture into the bottom of a greased square baking dish.
  • In a large mixing bowl, beat cream cheese until soft and fluffy. Then stir in the sugar, vanilla and lemon zest until fully combined.
  • Fold in the eggs -one at a time - then add sour cream until blended. Pour mixture over crumb sugar crust in the dish.
  • Sprinkle chocolate chips over, and bake cheesecake in a preheated oven at 148c for 45-55 minutes.
  • Let it stand to cool a while in the oven. Refrigerate the cheesecake overnight. Slice and serve.
NOTE: The dish requires overnight refrigeration.
