BANANA TOFFEE

BANANA  TOFFEE:

INGREDIENTS:      ( serves  1 )

100  g all- purpose flour
75  g  white sugar
10  g baking powder
50  g cornflour
150  ml  ice cold water
1  ripe green banana
75  g honey, for glazing
2  scoops vanilla ice cream
5  g sesame seeds

METHOD:
  • Hand blend all- purpose flour, white sugar, baking powder, cornflour and ice cold water for about 5 minutes or till a smooth batter is formed.
  • Heat oil in a wok or deep pan. Peel and cut the banana into cubes, coat with the batter and deep-fry for about 3 minutes until its crispy and golden brown.
  • Heat a non-stick wok, pour honey and bring it to a boil. Add the fried banana and toss until all the pieces are evenly coated. Sprinkle sesame seeds, remove and dip in ice water. Then transfer to a dessert plate and serve with vanilla ice cream.
