TIRAMISU

TIRAMISU:


INGREDIENTS:           ( serves 10 )

550  g finger  biscuits, plus extra for garnishing
400  ml  espresso coffee, prepared
300  g eggs, whole
100  g sugar
500  g mascarpone cheese
100  g fresh whipped cream
30  g cocoa powder
70  g lemon zest

METHOD:
  • Soak half the biscuits in the espresso and layer it at the bottom of a spring form cake tin.
  • Beat the egg yolk with half the sugar and lemon zest. Beat the egg white with remaining sugar, then add mascarpone. Fold in egg whites and whipped cream into the egg yolk mixture.
  • Add half the egg- cream mixture to the soaked biscuits. Add the dry finger biscuits, add espresso, then remaining egg-cream mixture. Refrigerate for 2 hours.
  • Cut into 10 pieces. Dust cocoa powder over and decorate  Tiramisu with garnish tiles and biscuits. Serve immediately.
