CREAMY BREAD PUDDING

CREAMY  BREAD  PUDDING:

INGREDIENTS:         ( serves 6 )

500  ml  milk
250  ml  castor  sugar
4  eggs
1/4  tsp  salt
1  tsp vanilla essence
12  slices white bread, crusts removed and cut
                                 into small blocks
2  apples, peeled and grated
1/2  tsp  cinnamon
3  egg whites
125  ml  castor sugar

METHOD:
  • Preheat the oven to 180c and grease a baking dish. Beat milk, 250 ml castor sugar, eggs, salt and vanilla essence together.
  • Toss bread and apples together and place in the baking dish. Pour egg and milk mixture over and sprinkle with cinnamon.
  • Place the baking dish in a bigger bowl filled with water ( enough water to reach halfway up the baking dish ) and bake in the oven for 20 minutes.
  • Then beat the egg whites until they form stiff peaks. Add sugar spoon by spoon, beating constantly until the mixture is glossy and thick.
  • Remove the bread pudding from the oven and place the egg white mixture on top. Return to the oven for 25-30 minutes until it is golden brown. Serve with custard.
