CINNAMON ROLLS

CINNAMON  ROLLS:
INGREDIENTS:       ( serves 12 )

Dough:
3/4   cup  water
1/2  cup milk
1/2   cup  butter
1  tsp  vanilla extract
1/2  cup sugar
1   large egg
3 1/2 - 4   cups  flour
4  tsp  dry yeast
1   tsp   baking powder
1/2  tsp   salt

Filling:
1/4   cup   butter,soft
3/4   cup  sugar
1/4   cup cinnamon
1/2   cup chopped walnuts

cream cheese icing:
150  g cream cheese, softened
1-1/2  cups  powdered sugar
1  tsp  vanilla extract
2-3  tbsp milk

METHOD:
  • You will need roasting pan with out the rack. Grease. Keep aside.
  • Dough:  Put water, milk, butter and vanilla in a saucepan, heat to lukewarm.
  • Put the water mixture in mixer bowl. Add sugar, egg, 3 cups flour, yeast, baking powder and salt.
  • Knead the dough 3-4 minutes until dough is smooth and springy, adding more flour as needed. Turn in a greased bowl, and let rise in a warm place, covered, until doubled, about 30 minutes. Punch down, let rise again about 20 minutes.
  • Roll out into rectangle about 1/2 inch thick. Spread with the butter. Sprinkle with sugar, cinnamon and nuts. Roll into a log, and pinch ends together to seal. Cut into 12 slices. Place in pan. Cover and let rise again until doubled.
  • Heat oven 180C . Bake 20 - 25 minutes. Let cool slightly then drizzle with cream cheese icing.
  • Cream  Cheese  Icing: Beat cheese, sugar and vanilla in a bowl until smooth. Add enough milk to achieve drizzling consistency.
