CHOCOLATE MOUSSE

CHOCOLATE  MOUSSE:
INGREDIENTS:          ( serves 6)

285  g chocolate, lightly sweet
40  g butter
5  egg yolks, pasteurised
60  g sugar
5  egg whites, pasteurised
30  ml vanilla, to taste
240  ml  heavy cream, whipped

METHOD:
  • Combine chocolate and butter;melt over a water bath.
  • Whip egg yolks and half the sugar until the yolks achieve full volume.
  • Whip egg whites and the remaining sugar until egg whites achieve full volume.
  • Fold egg whites into egg yolks. Fold butter- chocolate mixture into egg - sugar mixture. Add vanilla and fold in whipped cream. Present chocolate mousse in long -stem glasses.
